one duck, two pieces of old ginger, 120 ml Black Sesame Oil, 600 ml rice wine, one bag of Chinese Herb for cooking ginger duck, 2500 ml water, one tablespoon of salt, one tablespoon of crystal sugarDirections
1)rinse old ginger, slice it, pat it with knife flank, chop duck into several small pieces then blanch small pieces of duck for 3 minutes. Rinse blanched duck and set aside. 2)pour Black Sesame Oil in the wok, use medium flame to heat oil, deep-fry ginger slices till the color of ginger slices become dark brown, then pick up fried ginger slices, set aside, use the same wok to stir-fry duck till duck skin color change into light brown, turn off fire, add rice wine, water, and Chinese Herb, turn on fire and switch to small flame to simmer the soup for 30 minutes. 3) add salt, crystal sugar into soup and simmer for another 30minutes. ready to serve.
